The air that passes during normal breathing passes through the mucosa soaked in odor molecules and the transforms into electrical signal. The olfactory nerve it just sends the message to the brain.

Every day, in every corner, the dog's sense of smell finds a way to be used and developed. It is not necessary to invent who knows what exercises for these animals. The daily activities, walks, some sports or attending different environments can certainly expand the "database" of odors.
There are also experienced dogs, able to follow trails, those who they pass tests of utility and defense or trained to search for explosives or drugs, or even missing people. You can also think of molecular dogs who are certainly subjected to a particular training that multiplies the effectiveness of a dog's sense of smell that is already extremely developed. When this is not the case, on the contrary, the animal it is absolutely unable to perceive odors, so we speak of anosmia.

Speaking of the dog's sense of smell comes automatic thinking of particular breeds, to hunting ones. Distinctions can actually be made between the various types, based on the craniofacial conformation.
